Ingredients:

3 Eggs (chicken or duck)
3 Tbsp milk
3 Tbsp butter
Salt
Pepper
Desired toppings (cheese, jalapenos, sausage, picante sauce, e.t.c.)

Cooking Instructions:

1.) Crack the eggs into a small bowl and whisk/beat until they are a light, pale yellow in color.

2.) Add a dash of salt and pepper if desired to the mixture, then add the milk.

3.) Whisk until blended well (there will be air bubble in the mixture).

4.) Add butter to a skillet on low heat, and let it melt all the way. Add the egg mixture after this.

5.) Lift up the corners of your omelette with a spatula, letting the liquid slide under to cook. The omelette will become fluffed and thickened. Once all the liquid egg mixture has been slid underneath, flip with care and it should be golden brown.

6.) Allow the other side to cook briefly, then add desired filling (this could include jalapenos, sausage, tomato, onion, bacon, and such). Fold the omelette carefully in half.

7.) Remove the omelette from your skillet onto a plate. Cover with desired toppings such as cheese, picante sauce, peppers, etc.
