Lighter Than Air Pan Rolls

Ingredients:


2 pkts. yeast
1 c. warm water
1 c. sugar
1 c. butter flavored Crisco or butter,softened
1 c. hot water
2 eggs, beaten
6-7 c. bread flour
1 tsp. salt

Cooking Instructions


Dissolve yeast in the warm water, set aside. In a large mixing bowl combine the hot water, sugar, salt and the Crisco or butter and mix well. Beat in the eggs, the yeast mixture and 2 cups of the flour, beat for several minutes. Add the rest of the flour 1 cup at a time. Knead either by hand or dough hook until dough is smooth and easy to handle. Let raise covered in a greased bowl until double. Punch dough down and form into 24 rolls. Place in two greased 9 X 13 pans and let raise until double. Bake at 400 ° for 15-20 minutes

Note: 1 cup of the bread flour may be replaced with 1 cup of whole wheat flour. These freeze very well.
