Hot Sauce

Ingredients: 2 cans Tomatoes, diced and drained but not squeezed dry. 1 med. Onion, quartered 3 Serrano peppers (can use jalapeno's but not 3!) 3-4 cloves Garlic 1 handful Cilantro (remove stems) 1 Lime, just the juice 1/4 tsp. Cumin 1/4 tsp. Chili Powder 1 1/2 tsp. Sugar or Splenda 1 1/2 tsp. Salt Cooking Instructions Reserve ½ cup of the tomatoes, 1 quarter of the onion, some cilantro and a half a chili. Chop them all up and set aside. Perfect Turkey

Ingredients: 1 whole turkey 1 whole onion 2 sprigs fresh sage Cooking Instructions Prep turkey as such: Salt (and pepper) inside of turkey. Cut the onion in half and put into cavity. Pick fresh sage and add to cavity. Salt and season outside of bird. Place in roaster and cover top with aluminum foil. Bake at 250 degrees. 12 pound turkey--bake for 5 hours, 20 pound turkey-bake for 7 hours Note: I grow my sage outside and I pick leaves even in the dead of winter to season fowl. It's still fresh even then. I think the fresh air adds something to the taste. read more

Spinach Strawberry Salad

Ingredients: 10 c. torn spinach 2 c. sliced strawberry 1/2 c. oil 3 tbsp sugar 2 tbsp vinegar 1 tsp. lemon juice 1 tsp. dry mustard 1/2 tsp. salt 2 tsp. poppy seed Cooking Instructions Combine all ingredients for dressing and mix thoroughly. Chill. Just before serving, add spinach and strawberries, toss. Add dressing, spinach and strawberries to a container with a tight fitting lid. Shake well and serve immediately. read more

Traveling French Toast

Ingredients: Dough for one loaf of bread. If you have a breadmaker, one white dough. 8-10 eggs fruit of choice (or not) maple syrup Cooking Instructions Filling: Crack eggs and mix for scrambled eggs add about 1/2 cup of fruit of your choice (not imparative and the fruit will change the egg color dramatically). add about 2 tablespoons of maple syrup (to your taste). Fry as you would for scrambled eggs. You want them somewhat dry. Let cool to room or refridge temp. Strawberry Pie

Ingredients: 1 qt. strawberries 1 (2-oz.) box strawberry jello 1 c. sugar 1/4 c. cornstarch 1 1/2 c. water 1 pie shell or graham cracker crust Cooking Instructions mix together all ingredients except strawberries. Cook over medium heat until bubbly. Cool .Line pie crust with glaze,add berries and top with more glaze. Chill. read more

Eggnog Pie

Ingredients: 1 tsp. unflavored gelatin 1 tbsp cold water 1 c. milk 1/2 c. white sugar 2 tbsp cornstarch 1/2 tsp. salt 3 egg yolks, beaten 1 tbsp butter 1 tbsp vanilla 1 c. whipping cream, whipped to a peak 1 baked pie shell Cooking Instructions Soak gelatin in cold water. Scald milk. Combine sugar, cornstarch, and salt; mix well. Add milk to mixture and cook until thick. Add eggs and cook two minutes. Add gelatin, butter, and vanilla. Cool, then fold in whipped cream. Pour into a baked pie shell. Can be topped with fruit. read more

Chicken Salad

Ingredients: 1 whole fryer chicken mayonnaise to taste 1 can mandarin oranges grapes to taste apples to taste pecans or walnuts to taste Cooking Instructions Cook chicken in oven, then let cool. Remove chicken from bones and if needed, cut into bite size pieces. Mix in mayonnaise to taste. Open oranges and drain. Add to chicken. Chop up grapes, apples (leave peel on), and nuts. Add to chicken / orange mixture and stir well. Serve on bread or crackers. Note: Great for weddings and parties. read more

Potato Casserole

Ingredients: 7 med. potatoes, boiled and grated 1/2 stick butter, melted 1 1/2 cup grated cheddar cheese 1 (16-oz.) ctn. sour cream salt and pepper to taste Cooking Instructions Melt butter in medium sized, oven safe dish. Combine all ingredients, and pour into dish with melted butter, spread mixture evenly. Bake at 350 degrees F until top and sides are brown. read more
