Zucchini Jam

Ingredients: 3 c. zucchini, grated 3 c. sugar 1/2 c. lemon juice 1 (3-oz.) box apricot gelatin Cooking Instructions Peel and remove seeds from the zucchini before grating. Boil grated zucchini, lemon juice, and sugar together for 30 minutes. Add gelatin and remove from heat. Don't let it boil again. Pour into sterile jars and seal in a water bath (approximately 5 minutes). Note: Fills 8 jars (4 ounce size) read more

Taco Seasoning

Ingredients: 1 tbsp chili powder 1/4 tsp. dried oregano. 1/4 tsp. onion powder 1/4 tsp. garlic powder 1/2 tsp. paprika 1 1/2 tsp. ground cumin 1 tsp. sea salt 1 tsp. black pepper Cooking Instructions In a small bowl, mix together all ingredients. Store in an airtight container. You will want to use 3 tablespoons per pound of meat. Note: I like to make a bunch of this all at once and then store it in a screw top container. read more

Spaghetti Sauce

Ingredients: 1 1/2 lbs. hamburger meat 1/2 onion (chopped) 1(15-oz.) can chopped tomatoes 1(6-oz.) cans tomato paste 1 cube beef bouillon melted in 2 cups boiling water 3 tbsp garlic powder 3 tbsp garlic salt 3 tbsp parsley flakes 3 tbsp oregano 4 tbsp garlic pepper Cooking Instructions Cook hamburger meat with the onions. Add tomatoes and paste. Add the two cups beef bouillon and then add your spices. Note: *if this is too much garlic for your liking, just leave out the 4 tbsp of garlic pepper. read more

Sausage Biscuits

Ingredients: 1 large can Grands biscuits (not flaky or 3 eggs butter) (8-oz.) grated cheddar cheese 1/2 (16-oz.) pkg. bulk sausage like Jimmy Deans Cooking Instructions Grease individual muffin tins or spray with oil. Divide biscuits in half horizontally and push one half inside and up the sides a little of muffin cups. Do this to 8 muffin cups Cook sausage until crumbly and brown. Drain grease. Ricotta Frittata

Ingredients: 6 eggs 1 1/2 tbsp chopped marjoram 3/4 tsp. salt and pepper 1 small clove garlic, crushed 1 c. ricotta cheese 2 tbsp olive oil and butter mixture 1/4 c. parmesan cheese, freshly grated Cooking Instructions Preheat broiler. Beat eggs with 3/4 teaspoon salt and white pepper to taste. Stir in cheeses, marjoram and garlic. Heat oil and butter in 8- or 10-inch skillet. Add egg mixture and lower heat. Rib-Sticking Oatmeal For The Birds

Ingredients: 3 heaping c. old-fashioned oatmeal 5 heaping tbsp cracked flax seeds 1/4 heaping c. sesame seeds 1 heaping c. raisons 1/2 c. bacon fat or leftover gravy 4 approx. old banged up apples 2 bunches chopped up vegetable parings bunches of whatever you have about - old bread, rice, lettuce, etc... Ranch Dressing

Ingredients: 1 c. mayonnaise 1/4 tsp. garlic powder 1/2 c. sour cream 1/4 tsp. onion powder 1/2 tsp. dried chives 1/8 tsp. salt 1/2 tsp. dried parsley 1/8 tsp. ground black pepper 1/2 tsp. dried dill weed Cooking Instructions In a large bowl whisk together the mayonnaise and sour cream. Then add in the chives, parsley, dill, garlic powder, onion powder, salt and pepper. Cover and refrigerate for 30 minutes before serving. read more

Olive Oil And Basil Mayonnaise

Ingredients: 1 egg 1/4 level tsp. mustard (dijon, yellow, whatever you want) 1 tbsp vinegar, lime juice or lemon juice 1 c. oil (extra virgin light olive oil, veggie oil, etc) 2 fresh basil leaves 1 pinch white pepper Cooking Instructions Mix all ingredients except for 3/4 cup of oil in a blender or food processor for about 4-5 minutes. Egg Nests

Ingredients: 4 eggs 4 slices bread salt & pepper Pam spray Cooking Instructions While heating your skillet, tear a large hole in the middle of your slice of bread. when skillet is hot, spray with Pam. Lay the bread in the skillet and drop an egg into the middle of the hole. Cook gently until bread is golden brown on bottom then flip the bread to continue cooking on the other side. Season to taste.
