Zucchini Brownies

Ingredients: 2 c. grated zucchini 1/2 c. oil 1/2 c. water 2 tsp. vanilla 1 1/4 c. sugar 2 c. flour 1 1/2 tsp. baking soda 1/2 c. cocoa 1 tsp. salt Cooking Instructions In a large bowl, combine zucchini, oil, water, and vanilla, then add sugar. Blend flour, baking soda, cocoa, and salt; add to wet mixture. Blend all together well, then spread in greased 9 x 13 pan. Bake for 25 to 30 minutes at 350°. Best served with a chocolate or vanilla icing. read more

Yummy Chocolate Cobbler

Ingredients: 6 tbsp butter 1c. self-rising flour 3/4 c. sugar 1 1/2 tbsp unsweetened cocoa powder 1/2 c. milk 1 1/2 tsp. vanilla extract 1 c. sugar 1/4 c. unsweetened cocoa powder 1 1/2 c. boiling water Cooking Instructions 1. Preheat the oven to 350°. Melt butter in an 8 x 8 inch baking dish while the oven preheats. 2. In a medium bowl, stir together the flour, 3/4 cup sugar, and 1 1/2 tablespoons cocoa. Texas Chocolate Sheet Cake

Ingredients: 2 c. sugar 3 tsp. vanilla 2 c. flour 2 eggs, slightly beaten 1 tsp. baking soda icing (do not boil) 1 tsp. cinnamon 1 stick butter 4 tbsp cocoa 6 tbsp milk 1 c. coffee, cold (can use water) 4 tbsp cocoa 1 stick butter 1 box powdered sugar 1/3 c. oil, vegetable 1 c. pecans, chopped 1/2 c. buttermilk Cooking Instructions Sift together sugar, flour, soda and cinnamon. Sweet Potato Pie

Ingredients: 2 unbaked, prepared 9 in pie shells 1 1/2 c. sugar 1/2 c. light brown sugar 2 c. cooked and mashed sweet potatoes 5 oz. evaporated milk 3 eggs, beaten 1 tsp. vanilla extract 1/4 tsp. ground nutmeg 1/4 tsp. ground cinnamon 1/8 tsp. ground anise Cooking Instructions Preheat oven to 350°. Mix potatoes, milk and sugars; blend well. In a separate bowl, mix thoroughly the eggs, vanilla and spices. Pour into prepared shells and bake for 1 hour or until firmly set. Strawberry Trifle

Ingredients: 1 angel food cake (16-oz.) tub of Cool Whip (8-oz.) carton of sour cream (3-oz.) pkgs. instant cheesecake pudding mix 3 c. sliced fresh strawberries 1/2 c. sugar 2 tbsp Amaretto liquor or almond flavoring Cooking Instructions Combine strawberries, sugar and Amaretto and let set. Strawberry Pie

Ingredients: 1 qt. strawberries 1 (2-oz.) box strawberry jello 1 c. sugar 1/4 c. cornstarch 1 1/2 c. water 1 pie shell or graham cracker crust Cooking Instructions mix together all ingredients except strawberries. Spiced Baked Pears

Ingredients: 8 asian or barlett pears, cored and split in half 1 (8-oz.) c. brandy 1/2 c. water 2 tbsp honey 1 tsp. ground ginger 1/2 tsp. ground cinnamon 1/2 tbsp cloves 1 c. orange juice Cooking Instructions Preheat oven to 300°. Spray a large glass rectangular baking dish with non-stick spray. In a large mixing bowl, mix brandy, water, honey, orange juice, ginger and cinnamon. Ingredients: 1 c. flour 1 1/2 c. sugar 5 tbsp powdered sugar 1/2 c. softened butter 2 eggs 1/2 c. flour 2 c. finely cut rhubarb Cooking Instructions Preheat oven to 350°. Combine 1 cup flour and the powdered sugar. Cut in the butter. Pat into a 9 X 9 pan. Bake 15 minutes. Meanwhile combine the remaining ingredients and mix well. Pour over the baked crust and bake another 35-45 minutes until rhubarb is set. read more

Really Good Chocolate Cake

Ingredients: 1 box devil's food cake, prepared 1 (14-oz.) can Eagle brand sweetened condensed milk 1 (11-oz.) jar hot fudge ice cream sauce 1 (11-oz.) jar caramel ice cream sauce 1 large container Cool Whip Cooking Instructions Bake devil's food cake in a 9 x 13 pan as directed. While still warm, poke holes all in cake and pour Eagle brand milk all over the top, allowing to seep into holes. Warm jar of Carmel and fudge and pour both over top of cake.
