Resting after butchering

We are about to butcher 4 turkeys and was wondering if we can debone immediately after butchering and rest in refrigerator for a few days or does it need to stay on the bone? I have limited space and would like to do all 4, but know I wont have room in the refrigerator for them all....thank you for your input. :)

I read in this one book you are suppose to let your turkey hang for a few days before (yes, DAYS!) before even butchering. However, when we butcher our chickens we cut the meat off the bones right after butchering.
