what breed and more important are these hens or roos?

The grey (blueish) one on the left is Marshmallow at best I'm guessing easter egger. Marshmallow is 24 or 25 weeks old.
The black one on the right I think is an ameraucana (at least the people I got her/him from told me that and I saw the mom and dad they were beautiful black Ameraucana think both have same daddy) Hot Chocolate is about 21 or 22 weeks old.
Are we hens or roos? Nobody is crowing or laying eggs yet. Thanks for your input. Hope the picture is clear enough they don't stay still long enough to pick and choose the pose.

 
The blue on the left is a cockerel. The black may also be male, I think I see saddle feathers coming in.
 
The Blue Ameraucana is most definitely male. The black looks like it might be an Easter Egger. Looks clean faced. Need a better photo that shows the details of the back feathers better.
 
If you said the blue one was a cockerel you were 100% correct he found his voice first thing this morning.
