How long before Cornish crosses should be butchered? I've read that they'll be matured enough to butcher within 6-8 weeks! Your opinion on when it's time?
 
6-8 weeks is conventional.

If you restrict feed and encourage activity, you can take them a bit longer and get a larger bird. Some folks want bigger birds, some don't.

You do run the risk of sudden deaths the longer you take them.
