I have 3 Roos. I can't have one in town. I'm thinking of keeping one of them and getting rid of the other 2. But I'm curious if they are what you call a meat bird? I know the mature bird can be large, up to 13-18#, which is way to big/tough to cull. What age would be best suited for that? Thanks

I butcher them when they start to crow. That way you'll get as much growth as possible and still abide by the law.
When they crow will differ from breed to breed and individual.
If I'm not worried about crowing, I usually butcher DP breeds at about 18 weeks letting them free range till about 15 weeks and then house them for the last 2 or 3 weeks, cut the protein to about 12%.
