I second using newspaper. I always keep them on paper for a week or two. Its very easy to clean up, just roll it up. I then slowly introduce shavings starting where they sleep so they have less interest in eatting them.
Food works for me. Whenever we need to catch them I'll feed them a bit later than normal so they are distracted. And a good net. Also doesn't hurt to have help. Someone to keep an eye on it if you get in a tricky situation like it's up...
