Try asking your co-workers to cover for you.  Pay them if you can.  They have the seniority so you are out of luck on that deal, but maybe you can trade or pay them off.

I know....I feel like total, utter worthlessness at its worst.  If that is how you feel; not totally sure.

In my opinion, I think chopping is faster for the bird but more traumatic for humans.  Plus the involuntary struggling movements after death are not pretty to watch.  I don't know if this happens with slitting.
