Humidity should be low. You do not want any excess moisture especially in the winter. It is the excess moisture plus the freezing temps that cause frostbite. It sounds like you are doing it right.
I would say $2.25 to $3.00 a dozen retail is a good price. It just depends upon what people are willing to pay. Don't worry about what the big grocery chains are charging, there eggs are usually of inferior quality.
I would say your hens are a little on the old side for good egg production. Egg production really starts to drop off after 2 years.
We pay around .15 cents a pound or $7.50 per 50 lb bag custom mix at 16% layer. But we go through 2000 lbs a week.
I'm thinking you have a something other than mites going on. Mites wont make a hen limp and they usually do not kill a hen unless its really bad and at that stage you would be able to see them clearly.
As long as it's not citrus fruit and it's fed in moderation it should be fine.
If it smells bad I wouldn't feed it. My have a toxic mold.
Are you running lights, this is very important in the winter with shorter daylight hours. There is a very good chance your feed may also be your problem. We have tried many different feed mixes over the years and have discovered that...
Just keep an eye on the amount of moisture in the coop (IE: walls, roof, and litter). If you start to see moisture or frost on the walls or ceiling increase your ventilation.
