I just candled my turkey eggs and DH was right. If all of them hatch that are developing, I am going to have A LOT of turkeys. Only had to pull 2 out of the 25 I set.
QuirkySue Bourbon Reds are a heritage breed. They are not as big as the "meat" turkeys but taste great. The ones that I have had have been as friendly as my chickens.

How much of the shell have you removed? I have had "stuck" chicks before and it is very hard for them to get through that "leathery" membrane because they can't spin to zip the egg open. I usually have to slowly remove more...
