It is perfectly safe to consume fertilized eggs. There is no difference between a fertile and infertile egg beyond a small change to the appearance of the germinal disc (that little, white dot on the yolk) until the egg has been incubated to begin development of a chick. Unless one of your hens becomes broody *and* you allow her to set on the eggs, that won't happen.

What we all thought was a rooster in the photos, is actually a hen. First she started squating in front of me. Now she's laying eggs! I was told by my neighbor, who has menagerie of farm animals that they are all hens.
Thanks for the update. There are always those unique individual birds that fool even experienced chicken owners and you can't be sure of their gender until they either crow or lay an egg.

Glad to hear she is a hen, and a very smart one. With her around, you don't need a rooster. If you do have one, just pick up eggs every day and they won't have started developing into chicks.
