Should i breed my RIR to my speckled sussex how would the offspring look
rhode island red speckled sussex cross?

Pretty much like your RIR, just with white skin.
The speckling on the Sussex is recessive, so unless you breed to another speckled bird you're not going to get those pretty colors. Underneath the speckling those Sussex are mahogany, so you'll get red birds.
