We have leghorns and rir, bar rocks and delewares and austrolorp. As we are attached to the two delewares and the one austrolorp they will live out their lifes. However the others will probably come to our table for dinner once they stop or slow down on laying eggs will they still be good to eat at that age i assuming aroundtwo or three years old?
 
Their meat will be kind of tough if you were to butcher them at that age and they probably won't taste as good if you are to cook the bird as a whole, however many people like to cook them and put them in stew or soup and say it tastes best like that.
 
Most of my old hens are made into chicken salad, or chicken stew. Either way they are cooked in the crock pot, usually overnight. I save the broth when I use her for chicken salad and use it for gravy over rice or to cook noodles in.
