Cake Pumpkin Cake Pop Ghosts!
I love this recipe and we make it every year at my work. I ate about 12 yesterday. Lol!

Pumpkin Cake
4 Large Eggs
1 2/3 cups Brown Sugar
1 cup Brown Butter
15 oz Pumpkin Purée
2 cups AP
2t Baking Powder
1t Salt
1t Baking Soda
2t Cinnamon
1/2 t Clove
1/2t Nutmeg

Cream Cheese Icing
3 cups Powdered Sugar
6 oz Cream Cheese
6T Butter

Preheat oven to 350°F.
Grease and flour one glass 9 x 13 inch pan.
In a mixing bowl, beat together the eggs, sugar, oil and pumpkin.
Sift together the flour, baking powder, salt, baking soda, salt and cinnamon; add to wet ingredients and mix thoroughly.
Spread into prepared pan.
Bake at 350° for 25 to 30 minutes.
Remove from oven and allow to cool.
For the frosting: beat together the cream cheese, butter and confectioner's sugar.
Once the cake is completely cool, break apart and put in a bowl (or mixer) stir in frosting until the crumbs hold together like Play-dough.
Scoop and roll into desired size balls. Refrigerate.
Roll out white fondant and cup into circles big enough to cover your cake balls. Shape them like ghosts using the cake balls as the bodies. Use melted chocolate to make eyes. Voila! You're done

Deviled Chicken Eyes
You need:
Eggs
Salt
Vinegar(optional)
Mustard
Mayo
Food coloring
A tortilla or olives, anything small and dark that's edible
Toothpick

Boil your eggs!
I use bantam eggs, I always have issues with large eggs. I cook the small eggs in the water for about 10 minutes. I put in a little vinegar and salt while they boil, it makes peeling easier and the salt helps eggs with cracks not leak. When the eggs are fine boiling, I run them under cold water.

The inside:
You will want to peel your eggs and cut them in half. Put the yolks in a separate bag. Once all the yolks are separate, add your mustard and mayo. This is totally personal preference! I put about 2 tablespoons each per 6 eggs or so. I also may sprinkle salt and pepper on it. When done, squish it all together!

The eyes:
Cut a small hole in the bag so you can squeeze the yolk mix into the whites. You can dye the yolks to make them more orange too. I even it so it looks like eyes and clean the white up some.

Details:
Put our tortilla or olive or whatever you choose for the pupil in the center. Get a toothpick, and with red food dye, trace veins in the white.

Okay! I'll go first :)
My first entry will be....
Double Chocolate, Oatmeal, Pumpkin Cookies
Ingredients
3 cups granulated sugar
1 (29-ounce) can pure pumpkin
1 cup butter, melted
1 teaspoon vanilla
2 eggs
2t Allspice
2t Cinnamon
1T Ginger
2T baking powder
1½ teaspoons baking soda
1 teaspoon kosher salt
4 cups Oatmeal
4 cup all-purpose flour
1 (12-ounce) bag semi-sweet chocolate chips
Instructions
Preheat the oven to 375 degrees F.
In the bowl of a stand mixer, combine the sugar, pumpkin, melted butter and vanilla and mix until smooth. Add the eggs and beat for 1-2 minutes.
Whisk the pumpkin pie spice, baking powder, baking soda and kosher salt in a small bowl and add to the wet ingredients. Mix well. Mix in 2 cups of the flour, then 2 more cups and then the final cup. Add the chocolate chips and mix just until incorporated.
Line a baking sheet with parchment paper or a baking mat. Drop 1 tablespoon rounded scoops of the cookie dough on the sheet about 2 inches apart.
Bake cookies for 12-15 minutes. Let rest on cookie sheet for 2-3 minutes then move to a cooling rack to cool.

They are super easy and super delish! I really wanted to put chocolate jack-o-lantern faces on them, but I didn't have time to do all 115 of them :/

Cook for 15-25 minutes.
