Having successfully given our Polish rooster Soup the best new home possible, we've now found a new abode for one of our Sulmtaler roosters.

Which one is it best to remove though?

They were hatched from eggs together and are 3 1/2 months old, have shown no violence toward each other apart from establishing a pecking order, and are generally quiet and serene.
Do we remove the 'alpha', and let 'beta' have control of the flock, or is it best to keep the already established leader?
We'll also be combining our two seperate runs of 3 Sulmtaler hens and 2 Polish hens together, and don't want the older Polish to be picked on too much.

Any advice would be greatly appreciated.

I would keep the dominant rooster as his personality is pretty well defined; although, a lot can change as he approaches puberty/maturity. The 'Beta' rooster is a totally unknown quantity. Any chance of keeping them longer and making the choice after they are more mature?

Thanks for the advice @sourland

Unfortunately we shouldn't really keep any of our roosters for the sanity of the neighbours (we've already moved one of our favourite birds). We don't have the luxury of time either, so shall take the advice and keep the bird already established as alpha, as beta could become a nightmare on a power trip like you say.

Cheers once again for the words of wisdom.
