Hello,
I am a local chef that is trying to get more information about the possibility of the production of a great eating bird similar to the Bresse bird from France.

I might also direct you to another bird famous in Europe for its flavor, the Black Penedesenca.
They have their own annual foodie festival in Catalonia (Fira del Gall or Fair of the Rooster) the week before Christmas where people go to buy a rooster for $50 for their Christmas dinner.
Area restaurants compete preparing dishes made from the rooster.
In Catalonian meat markets, the birds are sold with their heads and feet attached to the carcass so people know they are actually getting a Black Penedesenca.

Chicken Canoe has given you great info. If you want black penedesenca , there are people in this country raising them - so no need to import
