Jae, I love the pics... With regard to doubling your bun recipe, theoretically as long as you maintain the formula it will work. The bakers formula is flour is the baseline and all other ingredients are a fraction of the flour. That said, I've had mixed results, so I would say go for it and see what your results are.

He looks more like a turkey now. He's actually pretty chilled out - it's the white ones that freak out when we pick them up and one of the white ones is so loud!

And here's our beautiful chick, Nutmeg (they are currently in an aviary with a cockatiel pair - they are actually a bit scared of the cockatiels ):

I forgot - I had a question for all you bakers of bread. If I was going to do a double batch of my milk buns, could I mix up two batches at the same time or would I be better to mix them separately? My stand mixer could take two lots of batter at the same time, but I'm not sure if it would knead it as well with there being so much more dough?

I've been mixing a batch up every night and leaving it in the fridge overnight to do its first rise, then shaping them, letting them rise again and baking them in the morning and that's been working out really well.

We were also excited today to discover that the finches have a baby. They haven't had one for ages. My daughter was freaking out because she couldn't find one of the adult finches (one that we hand reared so he's a bit special) so I went in there, and sure enough he was tucked away in their nestbox with the baby. It's so tiny.

I've had good luck with doing that on Brioche buns (that one I actually did a x4 when I made them for the restaurant). Like Bob said, give it a try and see what happens

Yup... Chainsaw duty is only on the weekend. Today is the first day of the new financial month, so this week will be busy.
