Day old chicks could sex by wings, and within one two weeks I'd sex em by holding them by their legs and the ones who try pulling up are the roos and ones whom don't the pullet but I have had an instance a hen do it while a chick. More so a 75/25 guess. At their age you can guess by behavior, comb, stance, aggression towards others.

The ameracaunas you should be able to tell the male should have a more profound comb, the silkie and reds I can't really see or tell all to well. And my "ameracauna" chicks I have, have straight combs with points growing right now at 4-5weeks with the "hen"s growing faster.
