Can you sprout wild bird seed for
Chickens

Absolutely.  The one thing you want to do is be sure there is no cracked corn or sunflower bits in the seed mix.  Whole sunflowers and corn would be ok.  Other sprouting options:  feed grade wheat and barley.  Lentils (from the grocery store, even!  I love stir fried lentils)  BOSS.  What ever you use, be sure it is feed grade, not heat treated, and not meant for planting.  (seed for planting is often treated with insecticide/fungicides.
