Processing Chocolate Turkeys

I have some chocolate turkey eggs in the bator now and I'm just wondering when would be the best time to process this breed. Any different than lavenders or mottled blacks?  That is the other two breeds I have with them.  

How can I think outside of the box when they won't let me out?

They would all be heritage varieties so the growth rate should be about the same.
Chickens, muscovy ducks, turkeys, donkeys , goats, dogs, fish, parakeets, a parrot, and a cat.

Chickens and dogs are healing to the soul.

I brake for squirrels.
