Yes they would work on a 5 gallon bucket. You just drill a 3/8 inch hole and screw them in. So far mine are not leaking. Yes they are plastic, I haven't had my chickens long enough to know their behavior but the cups don't stick out real far so I don't think they would stand on them but that is the opinion of a newbie.
 
Did you have to seal the hole with anything? Or are they self sealing somehow? I would hope to think the manufacturer makes them sturdy enough, even though they are plastic. And they may not try to stand on them, but from what I've been reading, you just never know what to expect when you have chickens!! lol
 
Per the directions I put some Teflon tape on the threads but afterwords I was not sure if that does much. It's not really like your threads are inside of a female threaded fitting. The walls of most buckets or in my case the jug is pretty thin. There is a rubber washer at the base of the waterer that goes against the outer surface you are screwing into.
