Well I found some more stuff out.

DSHS: to sell to restaurants, eggs MUST be graded which is TDAs department

TDA: we do not license for grading quail eggs

Me to DSHS: TDA doesn't grade them

DSHS: tell TDA to email that to us so we can write some rules just for you

*sigh* government

It's weird because a big name fancy grocery store near me sells quail eggs- how are they grading them? Can you even see through their shells or do you need a special flashlight?? My maglite didn't help at all.

I guess at least they're gettin something done so I can try this, but the DSHS lady said we will have to stay on top of it or else it'll get lost and nothing will really come from it. Anyone else in texas that wants to do this kind of thing is welcome to join. Now if we could only get the MEAT thing figured out

I am planning to try a hand at local health food stores as well.  I have done farmers markets before with chickens and that was easy enought to comply, but here in WA they require them to be graded as well..should be interesting!

 

Here in WA we can get a non-inspected permit to sell up to 1000 birds to the public.  That may be next on the list too
