Thanks :) My family is having a get together tomorrow and my grandmother asked us to roast a chicken, so I suppose I'm roasting him! We usually stick some butter, onion, and a carrot in the cavity for moisture, maybe some extra butter since there's not much fat on him.

I'll bet that bird is going to taste awesome! Glad you were able to do the right thing. You're right that is pretty lean. We had some Cornish X broilers last year that dressed out at 9-10 lbs--we let them grow way too long! smile.png
