need quick advice on goose egg i saved

my and my son found an empty nest about a week ago with just one egg in it we waited to see if the mom would come back but she never came back so i took it home bought an cheap incubator. i been doing a lot of research but my problem is i don't know exactly how old the egg is and when to stop turning it. i turn the egg 3-4 times a day and candle it daily and i can see movements the veins and all that and just a few hours ago the egg start wiggling back and forth but no pipping yet. i bought a humidity and temp gauge the incubator said 37.3 but the gauge is way off i think the humidity been at 80-85 percent i have no idea how to adjust the humidity. so far in been in there for 7 days now and with me not knowing what I'm doing at all the thing is surprisingly still alive. i really want to save this thing because my son is so excited about it lol. i check up on it every few hours to make sure everything looks ok. my estimate is its about 23 days old now but I'm probably wrong. so my question is how do i know when to stop turning the eggs. and how do i adjust the humidity. the air sac seem like it been in the same spot for a couple days now but i might be wrong so i marked it to make sure here is a couple picture i took last night if anyone can tell me how old it is and what i should do from here is much appreciated!

Yes. The egg is alive but has a way to go before hatching. Goose eggs take 28 days to hatch. I am not familiar with this incubator. Is there a tray for water? If so, keep it filled. When the egg appears completely dark, accept the air cell, it is getting closer to hatching. I would suggest that on, what you think is the 26th day, that you mist the egg, make sure the water tray is full, and keep the incubator closed until after the egg hatches. Humidity needs to stay high so the egg can hatch and opening it will cause the levels to go down. After the 26th day the egg no longer needs to be turned. Turning the egg as you have is fine.
 
Thanks for the reply. But yes it has a tray in the middle so do I fill it all the way or what cuz the gauge I bought said it was up in the 90s so I filled it half way now it says 80s. I have been spraying the egg at least once a days for the past 3 days. So when the egg is all dark with no veins left or little veins left that mean it's almost time to hatch??

I don't know about that humidity. If possible get another meter to measure the humidity to ensure that the gauge is correct. When the egg is close to hatching you will see no veins. Is your climate humid? Many times we forget that BYC is worldwide.
 
Well I live in Florida so it is humid weather but I didn't know it will affect anything if it's inside the house lol. The tray water has 2 spots inside it I only filled up one. The chick seem to be moving around a lot in there every time I candle it. It just kills me that I don't know how old it is. So I know when to stop turning. So do I wait until it pips n stop turning or how would I know when to stop turning exactly.

If you remember the day you put the egg in the incubator count off 25 days using the day after putting the egg in as day 1. On day 25 fill the water reservoir, mist, and turn the egg for the last time. Leave the incubator closed. No more turning, no more misting, no more adding water unless the reservoir becomes dry. Then you need to add water and try to be fast. And then wait and wait and wait. Incubators are notorious for having early or late hatches so be prepared. Are you seeing any condensation on the incubator glass? If not, I wouldn't worry about too much humidity.
 
The problem is when I found the egg n candled it. The chick was already formed and I seen movement the day I found it. And there is condensation on the glass but not alone like it was before
