hatching goose eggs

I am a newcomer to the world of ducks and geese although I have had hens for twenty years . I have acquired a mâle and female goose and would like to get some babies so I'm waiting to see if the female will cover her eggs to hatch them but so far she doesn't seem inclined to . She has now laid 12 eggs and if she's not going to cover them I will eat them but at the same time I don't want to eat them if she will cover them . I don't now how long to wait , it would be a real waste of eggs if they go off . Can anybody advise me ? I was told that she will eventually cover them when she feels she has enough , is that true ?
 
My roman tufted goose just now started sitting on her (unfortunately infertile) eggs. They can lay quite a few before they decide they have a big enough clutch. Mine the past two years started sitting when she only had three or four but this year she got to thirteen before she started. You may want to give her more time :) What breed is she?
 
Thanks for your reply .They are egyptian geese ( very snooty ! ) . Maybe I'll wait a bit longer in that case . I also have a duck covering a batch of eggs which I suspect are infertile . She's been covering for nearly six weeks now and I've been told the normal time is 28 days . Poor thing is still hoping . I wonder when she will give up .

My goose just doesn't have a gander - bought her two companion geese last year and they both turned out to be females and Canada goose hybrids on top of that so they're sterile. I have a gander on order for her though so next year! I'll be giving her some duck eggs to hatch and hopefully that makes her happy.

And for ducks, yeah, 28 days is the normal time (muscovies take 35) so they are likely not going to hatch for her :(
