Dipping is just to loosen the feathers, so dipping time is only 5 - 7 seconds.. any longer and you start cooking them

Yes, I know how/why to scald a chicken for plucking....but that's really hot, very easy to ruin the skin if not the meat at that temp.

I go about 150, takes maybe a minute or so depending on bird.
