new to Quail!

My husband is always trying to come up with new ideas to get our kids interacting with new animals and today he brought up wanting to look into Quail. I quickly jumped on board. Then i realized i have no idea how to care for them! So i have quite a few questions.

What is the recommended breed for warmer climates such as east Texas?

What is there dietary plan threw out there life?

Recommended age on moveing to outdoor pen?

What s the average size per adult bird?

When do they start laying eggs?

How many square feet per bird in pen?

I have Bantam welsummers,   Bantam Olive eggers, MGB, LF Welsummers, BCM, BLRW, LF Buff and Golden Laced polish x Tolbunt, LF Sumatras, Bantam Sumatras, d'anvers, CCL, Bantam wyndottes   and bunch of free range birds
