One dead- who dunnit? (warning, gory photos)

Woke up to a dead hen near the house, about 200ft from the coop. Our coop door is a makeshift old window bungee corded between the small shed doors, with a wire panel slotted above it. The door/window was untouched but the wire panel was pulled out on the ground, so the animal had to climb over the window about 3-4 ft. Feathers in the coop, more another 100 ft away, and the body was another 100 ft.
None of the other 24 were even touched. I was thinking fox, but the carcass wasn't eaten at all? Just maimed on the back with bite marks on the neck. Poop seen in photo was right next to the door, doesn't look anything like the four dog's poop's we own.
Live near Houston tx, predators that we know of are foxes, raccoons, opossums, owls, Hawks, stray dogs and cats.
 
I guess I should clarify. The poop is very large, not at all from a chicken. That photo has a strange perspective. It's probably dog poop, but it looks a little odd. It's very "thick" but also short, like a large cut in half dog poop. Sorry for the descriptiveness, it's probably not even related, but I thought I'd include it just in case.
I'm not ruling out a stray dog, or even one of my own dogs, but I don't see how a dog could get in through that opening so delicately, and only grab one chicken in a coop full of them, and then leave the same way without causing more destruction.

I'm thinking raccoon. They can climb, will kill a single bird, remove it from the site (possum would eat it there) and can leave it looking like that.

Do you have a live trap?
 
Setting two raccoon traps with parts of the carcass and rigging up a trail cam. Hopefully something will show up.
