Left only feathers and intestines

Every year we are visited by a predator. It's that season and the thing is back! I live in north central Texas. I've only ever seen: raccoon, possum, coyote, skunk and my neighbor's cat (but she's never threatened the chickens). Occasionally we have a naughty hen that will find a place to roost or hide near the coop. If we don't find them, they turn up dead in the morning

All that is left are feathers and all or most of the intestines. No body or anything else. What predator takes the body leaving the intestines????
 
Thank you. I'm determined to put an end to this. We've set large and small traps many times, but caught nothing. It would help if we knew what we were up against. I'm both kicking myself for missing this chicken at lock up and incredibly frustrated with this predator.
 
could be a raccoon my grandparents raised pheasants many years ago and they raided the place and only left the feet and beaks behinds, don't have possums where i live so have no idea what they do to chickens, could be a weasel or mink not sure if you have them but they can gut a chicken and maybe drag the body away.

Did you bate the traps with meat?
