We have tried incubating eggs in egg cartons this time and rocking them back and forth about 45 degrees each way 3 times a day. When we came to candle the air sac looked like 2 search lights crossed in the sky , if that makes sense. Question is how do we mark the air sac, do we choose one and stick to that side?
 
When you turn them just tilt them from one side to the other side. don't shake them or you will have scrambled eggs that might not hatch. The air sac should be on the round side.

It sounds like you might have some saddle shaped air cells? If so, when you mark them you should outline the entire air cell, no matter what shape. Saddle cells are hard to judge and if the chick makes it to pip you never really know where they are going to do it.
