HC soffit is attached to bottom inside edge of oversized(~1") fascia, bottom of rafter extensions, and wall of coop.
I pre-bent it on garage floor, then installed.

I'm using 1x6 for trim boards around the roof and then will do as you suggest - use the hardware cloth for the soffit.

My overhangs will also be 12" and the 3.5" gap should help with keeping moisture down in the winter. My walls are 5' to 6' tall - so drafts up there shouldn't hit my hens.
