Whoops! I must have misread the first post. I thought OP was waiting on a chick shipment to come in three weeks.

We were hoping to hatch a few of our eggs and slip a few sexed chicks from our local store under her as well. Their shipments are every saturday so I am trying to figure out our best option. As fun as it is to hatch eggs, I'm leaning towards getting some ceramic eggs and just introducing store chicks if that is our best chance of her not rejecting new chicks. Of the 3 she hatched last year 2 were roos and if we let her hatch more we'd rather not find homes for 3-4 roos.Whoops! I must have misread the first post. Thanks! Probably easiest to not try to time hatching with this, huh? Bummer, but better than having rejected chicks or eggs.Getting sexed chicks does sound like an option for you then. What I have done when giving feed store chicks to a broody is get them that day, keep them in the house and put them under the broody at night with as little light and fuss as possible. (Taking the eggs out, of course.) It has worked for me every time. Naturally, your mileage may vary as each hen has her own personality.
