The Texan Pioneer utility pigeon- a tutorial

Oh man, I just read this entire thread, and was so excited to find pigeons. Then I got to the end of the thread and felt utter disappointment. Any auto-sex ing Texan pioneer pigeons available for sale, anywhere?
 
My husband and I just moved part-time to France and inherited a whole lot of birds with the house we bought. Included in these were pigeons that the previous owner says are Texan ones. I'm a bit concerned that there has been some dilution of the breed due to a few rogue incomers, but they are beautiful, fat pigeons - mostly either black and white or brown. My question is whether this is the auto-sexing - are the black and white ones one sex and the brown another? I'm finding it hard to tell when monitoring the birds.
 
PS Although I'm fully supportive of the idea of raising pigeons for meat, and my French husband has absolutely no qualms about killing and preparing our birds, I've grown very fond indeed of my fat pigeons and can't quite bring myself to have any of them dispatched yet. We rescued one when it was very young and had been abandoned by parents and horribly attacked by a single male pigeon. It was raised in the kitchen and still comes in most days for some food, water and a tickle. It grooms my fingers and then lets me scratch its head, all the while waggling its wings. If this carries on I fear I may have to become a vegetarian!!
 
How do they pluck. Do they need to be dipped in hot water. I am so interested in these birds. I planned on getting quail in the spring but you just might have changed my mind. Still digging for info and researching. I need meat and egg production for my family of 5.

I too just read this whole tutorial to come to this sad ending. Its hard to find anyone using pigeons for meat.

6 months ago I was gifted 6 pigeons, 2 homers and 4 Cubans. Once I saw that the birds are "self sufficient" in a way, I was hooked. I started researching to see if pigeons could be raised for meat and found out that these specific lines like the Texan pioneer that are utility pigeons. And boy did my interest grow yet so far I've failed miserably to find anyone selling utility pigeons.

I really hope someone out there with this breed reads this growing interest and decides to help us out
