Wing: An easy chicken recipe for you.
Stick whole chicken in crockpot over night with almost enough water to cover it. Strip bones of meat. Let bones & skin simmer a while longer to make broth to throw noodles back in later. Shred all chicken.
Use shredded chicken as follows to make several meals:
Chicken & noodles
Add a handful back into broth in crockpot once skin & bones are removed. Add noodles & diced veggies (if desired). Cook until noodles & veggies are tender.
1 cup flour
1 whole egg
Pinch of salt
A few drops of water at a time until rollable dough is made.
Cut into thin strips (pizza cutter works well)
Allow to dry several hours before cooking.
Lightly oil hot skillet. Lay flour totrilla flat in skillet. Sprinkle cheese (I like mozz, but any kind will do) over entire tortilla. Add thin layer of chicken to half & fold tortilla over. Lightly toast both dides. Serve with ranch, sour cream &/or salsa.
Hot broth (just enough to wet chicken down)
Add cornstarch to broth & stir until cloudy.
Mix into chicken & heat while stirring until sauce thickens. Serve over potatoes, rice or noodles. (Make a bit runny for these)
Or derve on bread, biscuits or buns for sandwiches. (Make thicker for these)
