Need help processing guinea...what to do with all the fat??

Very old thread, but glad it exists! Had to dress out one of my guineas this evening after she decided to land in the yard where my dog was getting a bit of solitary exercise...nothing better than a bit of chase and pounce, I guess. Got handfuls of that yellow fat and was wondering if typical. Mine do have quite a bit to feast from while ranging, plus they tend to coop up with the chickens at night thanks to the provided evening meal.
