What are you baking now? - Page 322

Well, I didn't bake anything....But I made a delicious Cool and Easy Jello Pie!  The family loves them.  I did one layer in lime, and topped it off with strawberry.  When you slice it, it's so pretty with pale green on the bottom and pink on the top.

Proud owner of some nice show quality Buckeyes and Silver Penciled Plymouth Rocks.  I love gardening and being outdoors.  I'm lucky to have a great family, and two cute dogs.  I live out in the country on six wooded acres and it's just paradise!  (Except the mortgage payment and bills, of course)

here you go

poor mans beef wellington

1lb         minced beef
2 tbs      tomato ketchup
2            eggs
1            onion , minced / grated
2            garlic cloves , minced / grated
1/2        packet sage & onion stuffing (this soaks up the juices when it's cooking and keeps it moist)

mix all above really really well (i used a food mixer) shape into a sausage on a baking tray and cook in the oven for 30 minutes @ 350 then let cool.
-----------------------------------------------------------------------------

1 egg
1 clove of garlic minced / grated
1/8 cup     butter
1 1/2 cup  mushrooms , finely chopped
pack of puff pastry

add butter garlic & mushrooms to a pan and cook down on low heat till very soft let to go cold.
Roll pastry into a rectangle large enough to wrap up the beef. Beat egg with a little water and brush over pastry.
Spread the mushroom mix into a meatloaf-size strip along the middle of the pastry. Sit the meat on top then cut pastry either side into strips from the meat outwards. Criss-cross these over the meat to enclose and tuck under ends. Brush with more egg, then place on a tray and cook for 40 mins @ 350, covering after 30 mins if going too brown.

I wonder how a poor man's turkey wellington would taste.  I may try substituting the beef for ground turkey.

Bread. It's on its second rise in the bread machine. I prefer traditional shaped bread so I will transfer it to a bread pan before cooking.  Then I need to make a 'treat' for DH's daily coffee break. Thinking of banana bread today. Better get it started, huh?

Love, Linn B * * * Nesting with my perfect DH, Cee Cee (choc. lab), Belle (orange tabby), Rusty (fertilizer rabbit), 5 Australorp hens, 4 Lt. And new, this May nine girls -- a Cochin, a Cuckoo Maran, an Easter Egger, 2 Buckeyes, 3 black sex-link (but Brownie isn't black), and Nesco, my Roaster Oven hatchling. Sigh! Victim of Chicken Math!

Breeding Welsummers and Barnevelders.

Having an Icelandic in the coop is like having a 2 year old in the house - they are into everything and don't follow the rules.

I have zero chicken willpower.
