I was fixing a pan of this for tomorrow morning and thought I'd share it. You can either make it the night before and bake it in the morning or I usually bake it in the evening and then in the morning my husband spoons up however much he wants and reheats it in the microwave.
Baked Oatmeal
1/2 cup melted butter
1 cup brown sugar
2 eggs
3 cups quick oatmeal
2 tsp baking powder
1 tsp salt
1 cup milk
1 apple chopped
1/2 cup raisen or dried cranberries
1 tsp cinnamon
Mix all together and bake at 350 degrees in a greased 9x13 pan for 20-30 minutes.

Ok I only had regular old fashioned oats, so i increased the milk by a 1/4 c. to make sure it had enough liquid fo cook in and absorb. So..I'll let you know how it turns out. So far it smells like a fabulous oatmeal cookie.
