When to butcher geese?

Didn't you know??? Goose, like so many other meats, is manufactured in those little styrofoam packages!!!

We have 6 Toulouse geese, along w/ Muscovy ducks, Irish Dexter cattle, meat breed sheep, 200+ chix (Freedom Rangers & layers) & a couple useless horses that destroy as much pasture as they can. Then there's the egg stealing LGDs. We got one gosling last year, because the dog took all the eggs! If I were there, I could do something, but I'm not & my partner's don't know how to train a dog.

They believe in doing it all w/ loooooove. Nice people, but not dog trainers.

I had some Dexter ground beef and it was REALLY beefy tasting. I didn't really like it. Is that the normal taste? I think dexters are perfect little cows.

I'll be watching this thread, as my husband is interested in getting some meat geese too, and we don't know much about geese. We plan to get a pair and raise their offspring to eat. All I know is that I don't want Chinese geese, I was attacked by those once as a kid and I'm still scared of them.
 
Yea, the cow was home raised on alfalfa and timothy grass I believe.

Ariel, I totally agree about the attacking geese. I raise Cotton Patch geese because they're not aggressive and they're (relatively) quieter.

And I've never seen goose at the supermarket either except in Europe.
 
yes, that is why. I usually skin my chickens, but I don't know how easy it would be with geese, I will be finding out soon if my one gander doesn't start behaving.

Does goose taste like duck? I don't like duck, so I've always wondered if it would be worth it to try goose or if I'd just be disappointed.

Wild goose , slow cooked on a rack in a covered roasting pan , tastes very much like a beef roast .

Do you cook roast them upside down to let the fat render off? I've heard that otw the meat is very greasy. We're getting ready to harvest our geese this fall--they were supposed to be Toulouse (that's who was sitting, anyway), but 2 look like Emden and the other perhaps an Emden/Toulouse cross.

Lol this is exactly why I was searching....my gander was extremely rough with my daughter's favorite chicken, a sweet docile buff Orpington . I ran up and he still hung on! I had to pry his beak off her head.
Today's episode was the worst.
He may become Christmas dinner instead of his daughter......he will be a bit over a year and a half. I want to know if he will be tough, too tough to roast.
