With females I'd wait till they started to squat and push a pie tin under them. The males were "taken care of" at the vet with a catheter. Wouldn't try either with a wolf.
In seriousness, I wonder if they do it similar to how they collect deer urine for hunting attractant - they raise deer, and will keep does in estrous (or bucks, or whatever they are marketing the urine for) in an enclosure with a clean, grooved hard floor (concrete?). The urine runs down, is collected, filtered and bottled. I would bet $$$ this is how many other types of animal urine is collected
