Boiled Quail Eggs

I tend to boil very fresh eggs (of both quail and chicken) frequently. I have found that if you crack the eggs with the back of a spoon after you take them off the stove, pour the cold water in, let them sit for a few minutes, and the shell peels off beautifully.

Right now I am eating all of my quail eggs due to the lack of incubator. I boil for 2-3 minutes, let sit in hot water covered for 4-5 minutes, then shock in ice water for 2 minutes. I hated peeling them until I began to ALWAYS start at the large end of the egg. If there is any air-pocket, it will be there. This gives you a chance to get into the shell before getting into the egg. Once you are under that pesky membrane its smooth sailing.

Also, I recommend letting the eggs sit in the fridge for a few days. I will typically boil once a week. That makes a few eggs a little tough to peel, but the older ones are a frickin breeze!
 
I have read about tapping them gently (after boiling) and putting them 10 at a time in a jar and shaking them. Seemingly the shells just break off.

Havnt tried it yet but as there are 50ish eggs in the fridge already, might be giving it a try.
