Greek Tzatziki sauce.........Made with yogurt, mint, garlic, cuccumbers......a staple on gyros...........

It's the vinegar/water/sugar and some onion recipe for my cucumbers in the summer. Can't get enough of them. tongue

I just made a sandwich out of one and it was bitter.  sad

Reduce bitterness by cutting the stem end slice then rubbing that slice against the cut end of the cuke until a foam is drawn out of the cuke.  Rinse then pare and slice the cuke.

I make a japanese- style cucumber salad with rice vinegar and toasted sesame seeds.

Has anyone ever tried growing the little yellow "lemon" cucumbers??  They are supposed to be sweeter than green cucumbers.  I have a couple plants growing in my garden now and I'm eager to see how they taste smile

I don't have lemon but I do have white (NC Old Timey) and will never go back to green. They make the best pickles EVER!! love

Ceviche
Seafood cooked, (by marinating) in lime juice and a little salt then add tomatoes, cucs, onion, green pepper, parsely and cilantro.
soak overnight or more. Until seafood is no longer clear.
yum.
