Bourbon Reds Laying Eggs

Hello, Great thread. I just started with turkeys and mine are 1 week old today. I picked up 5 Bourbon Reds and I'm drooling over the egg pictures.

How long can you store the collected eggs before you incubate them? What temp. do you store them at? I'm hoping I have a couple of girls and at least one boy in the group of five. The odds are with me, but you all know how that goes.
 
i dont know why but mine started laying in january,its feb.20 and still laying eggs,i have auburn turkeys and have not seen an egg from them yet,i live in louisiana dont know if that make a difference
 
I have three bourbon reds two hens and a tom. They are about ten months old now and I have seen a small amount if mating behavior. I haven't had any eggs from them but I noticed inside their coop there is a nest( from straw on the ground) and they put the shell from a honeydew melon right in the middle. Very odd. If one of the girls is broody is it the same as chickens. Do they sit all the time? I have hatched chickens but never turkeys.
