Well I finally caught up !

 

We started out early & vaccinated the bazillions of chicks here...not the ones with the broody hens though, that would have been too much for the hens.              

 

Then the Cuckoos kept running up the hill behind the cabin to free range which is NOT ALLOWED !

 

So I chased them down at least 6 times, and DH chased them down about 3 times, then we said to heck with it & herded them back in their pen.

It is strange cuz they never

 wander up there, and today they just kept going up there........

 

 

Then I collected eggs, and the Java pen gate did not shut, and Mr Java got out & had a ruckus fight with the Cuckoo Cock..so had to seperate them, mean while a Java hen escaped & I had to chase her all over hill & dale.............got her put back & discoverd the gate open again !!!!!!!!!

 

Took at look & seems the latch is broken, not lining up with the do-hinky.

 

So...it is kinda quiet now, finally !

 

Now, got the washer going & going to grab some grub.

Also wanted to ask...............for those that make enchiladas....................

 

How do you prepare the corn tortillas so they do not crack when you fill them, roll them, and put them in the casserole dish ?

 

Steam them ? (I tried that & they crumbled)

Dip in sauce ? (I tried that & they fell apart)

So I am looking for how others do it.

You "fry" them real quick in hot oil.  Like 10 seconds.  Not enough to really crisp up but long enough to soften.  Then drain on paper towels.  You can then dip in sauce and roll or you can roll and pour sauce over.

One more thing...if you dip in sauce then roll...you still want to pour more sauce over.  I wasn't very clear on that.

So I am looking for how others do it.

I put them in the microwave for 15 - 20 seconds between two damp clothes or paper towels. My MIL who is 100% Guatemalan heats them in a pan in a little oil or olive oil and it makes them flex able... Not long enough to fry them just long enough to heat on both sides maybe 30 seconds place on a plate pat dry with a paper towel and then fill roll n plop in the pan. Also make sure they are fresh the older they are the more likely they are to crack.

I have friends who have it, what I have I need to keep for my soap making. What you can do is the gorcey store should have it. I can also look up some people your way and see if they will let you have some. Give me a day or so to do that.

Well I just got back in from the garage where the brooder is. I took off the small piece of cardboard that I used (note pass tense please) as an access door.

Reached in pulled out their feeder, refilled it and put it back in. Counted the chicks. Suppose to be 8, I counted 7. Perhaps I made a mistake so I counted again, and again  and again. Hmmm, the chicks where cheeping....loud. They ratted out their brooder mate. We had a runner! barnie.gifWow just that quick it got out through the small opening. I found her hopping along amongst the tools, etc and she was quite happy. She kindly waited for this old man to pick her up and return her to the brooder.woot.gif

The brooder is now 9' long and 4' high and the top is covered with poultry netting. (we use call it chicken wire)  So much for working on the "palace" today.
