What is the shell life of fresh eggs? Do you keep your eggs on the counter or refrigerate? How does that affect the shelf life?

I know how to do the float test but would like to know what the average time is that they stay fresh. We are starting to accumulate more than we can eat but not quite enough to sell to my co-workers yet.

how about giving some to your co-workers, kinda like giving them a sample of what they can have, then when you have enough to sell, they will be more enticed to buy...

I agree. I will probably do that. Do you store your eggs in the fridge or just out on the counter? Anyone else have any guidelines you go by?

Eggs can be frozen. If you only have slightly more than you can eat, you might run short over the winter when eggs slow down.

I suspect that if you give eggs for free than try to charge for them later, all that happens is that people get ticked off because they think they deserve their free entitlements. If you have eggs to give for free, I suggest the Food Bank or local soup kitchen. Or hand them out at the unemployment office. Those people could use a bit of free protein.

Eggs store along time, either out on the counter, or in the fridge. They store longer in the fridge.

I store mine on the counter for a week or 2 then move to fridge and store up to 2-3 months. I have never had a bad egg. It is rare I keep any 3 months but it has happened.

How do you go about freezing them? I thought the expansion would crack the shell. Unless you mean freezing just the contents or freezing them pre-cooked?

You can freeze them whole but separated - yolks from whites.
OR you can mix as if you were going to scramble then freeze the beaten eggs in an ice cube tray.
Once they are frozen solid you can put the cubes into a freezer bag.
1 cube is approx 1 egg.

I keep my fresh eggs on the counter, unwashed and they stay there about a week at the longest.
I only have 6 hens, so I wait to get a dozen together to give away if I don't use them myself.
