I forgot to add that when you use an egg poacher, but a dab of butter or margarine in the little cups and let them melt over the water before you add the eggs.
Boiled eggs are a favourite of mine too. If your eggs are from the fridge, give them a few minutes to warm up as you heat the water. As the water comes to the boil, very slowly lower the eggs into it on a spoon or ladle. Some people boil them gently for four minutes but I prefer eight. If you boil them for ten minutes and put them in the fridge they are good sliced with an egg slicer on salad with mayonnaise.
Fried eggs should be cooked very slowly in vegetable oil. The example in the link below is cooked too long and the edges are crisp. If the white bubbles up, the oil is too hot.
Try also scrambled eggs, whisked in a saucepan over heat with butter and milk. Good on toast.
Omelettes are popular if you want to add boiled potato, bacon and other things. Try Spanish omelettes.
