I make BBQ chicken a lot. Put whatever chicken pieces you have, or if you have a whole chicken, cut it up and pop it in there. I add pepper and garlic powder, maybe a little salt. Let it cook all day on low. Turn it off, take the chicken and juices out, debone it, put the chicken meat back in there, add your BBQ sauce, put it on warm to warm up the BBQ sauce, and voila! BBQ chicken.

I like to cook pork roasts in my crock pot. I just place the roast in the crock pot with no water, put it on low, and let it cook all night. Then the next day I tear it up with a fork and either put BBQ sauce on it and have BBQ sandwhiches or I pour a can of cream of mushroom in it and eat it with rice and cornbread.
*** I know your probably thinking it would burn or something without putting water in it but believe it or not it want. While its cooking all the natural juices and fat cook out and it makes it more flavorful whereas if you had put water in it it would "water down" the flavors. A friend told me to do it like that one time and I have done it like that ever since.
*** If you dont like alot of grease/fat floating around in it you can skim it off which is what I always do. If I'm having it for supper that night and dont have the time to cool it and refrigerate it so I can get it out that way I put a big colinder(sp) in a bowl, feel the colinder with ice and pour the juices through the ice and as it goes through the fat will coagulate on the ice and the juice will go through. Then you can just put the juices back in the crock pot with the meat.
Try it and let me know what you think.

I absolutely adore my slow cooker, so much so that I have two and am wanting a third for Christmas (although the one I want this year is only a 2.5qt). We do crock pot meals at least twice a week, the days when I can't come home over lunch so we're gone from 7am until after 6pm. It's so awesome to come home to a hot meal waiting after working all day! My absolute favorite recipe book is the one my MIL got us for Christmas a few years ago, it makes up a good 50% or more of our meals some months. It's called Make it Fast, Cook it Slow by Stephanie O'Dea (she has a second book too, that's also on my wishlist for Christmas).
Chicken Tacos
4 boneless, skinless chicken breast halves (if we're using the freakishly large store bought ones we only use 2, and last time we made it with chickens we processed ourselves and I used the skinless leg quarters and breasts from two chickens that weighed in between 2-3lbs dressed)
1 15oz can tomatoes w/chiles (Rotel) and their juices (last time I made this I didn't have any so just used regular diced tomatoes, still tasted good)
1C frozen corn
1 15oz can black beans, drained and rinsed
garlic powder, cumin, and chili powder to taste (I added these, they aren't in the original recipe...pressed for an amount, I'd guess about 1 Tbsp or just under of each)
about 1-2 Tbsp water (the original recipe calls for 1/3C but I found that to be way too much liquid)
Put the chicken into the stoneware and top with the entire can of tomatoes, corn, beans, and water. Cover and cook on low for 7-8 hours, or on high for 4-5 hours. Shred the chicken with two large forks, and fill corn taco shells. Add your favorite taco toppings.
This last time we made this I took some of the leftover taco filling and put it in a 2.5qt casserole and added 1/3 jar of salsa, then topped it with cornbread batter and baked it in the oven according to the cornbread recipe for an awesome taco casserole.
Just finished Eating this awesome crock-taco recipe on soft flour tortillas- it was AWESOME-Thanks ainaWGSD! I have a large crock so there wasnt enough liquid ,and I hate to add water so i added 1/3 can of cream of mushroom condensed and it worked out great!
I'm glad you liked it! Last night as I was prepping for tonight's dinner I remembered another crock pot tip...baked potatoes. Just wrap the potatoes (regular or sweet) in tin foil and plop them in the crock pot on low all day. This is now my favorite way to make baked potatoes (and the ones I "baked" overnight are actually going into sweet potato burritos, so it's a convenient way to cook potatoes for all sorts of recipes too).
How about a dessert to go with dinner?
Crock Pot Apple Pie
8 tart apples peeled and sliced
1 1/4 tsp. ground cinnamon
1/4 tsp allspice
1/4 tsp nutmeg
3/4 c milk
2 T butter soften
3/4 c sugar
2eggs
1 tsp vanilla
1/2 c Bisquick
1 c Bisquick
1/3 c brown sugar
3 T cold butter
Toss apples in large bowl w/ the first 3 ingredients. Place in lightly greased crock pot. Combine the next 5 ingrediants and spoon over apples. Combine the 1 c Bisquick and brown sugar. Cut the cold buter into mixture until crumbly. Sprinkle this mixture over top of apple mixture. For the crumbly mixture I make more, the best part.
Cover and cook on low 6-7 hours or until apples are soft. Make sure you do not over cook. With my crock pot the cooking time is shorter, like microvens some may cook different than others.

I Love making crock pot meals in volume so i can get creative with the leftovers
Hearty Spaghetti & Fresh Italian quick Bread
Prep Time: Less than 5 minutes
Oven Time : 50 minutes
Spaghetti :
Leftover homemade from scratch Crock pot minestrone soup ( I made mine with carrots , potatos , lots of noodles ,onion, fresh garlic ,etc)
Jar of ready made sauce
Strain Broth out ( I freeze it for a meal later in the week)
Add Jar of Sauce
Heat
Italian quick Bread:
3 cups self rising flour
3 tablespoons sugar
1 can beer of your choice
Parmesan
garlic powder
shredded cheese
Mix , put into greased loaf pan & top with garlic powder ,cheese & Parm sprinkle- 350 for 50 minutes- Its that Quick & simple , no rise time involved
