BEST way to roast a duck...mallards

My nephew went duck hunting...and returned with a bounty.
Cleaned 13 ducks last night..... we want to serve roast duck for Christmas.
Looking for tips:
They are wild. They were shot. So looking to kick the gamey taste.
Looking for suggestions or recipes.
Tips, etc...they are going back! lol
Any cleaning tips for next time?
They were pretty easy to pluck, but how do you store yours with skin? or not?
We left the skins on.

This is how I like wild duck.  Take the boneless skinless breasts and marinate in Dale's or soy sauce.  Cook over a very hot charcoal fire until medium rare.  Slice very thinly across the grain.
